Pickle almost any vegetable like this

Pickled vegetables have a special juicy flavor which no one can resist eating. They are perfect to be served as a side dish, or just have them with whatever you eat. Well pickled veggies can make any food taste better. Here are a few veggies and combinations to watch out for…

Onions– Pickled onions go perfectly with Indian food. It is something which adds a little crunch to the food. Take one large onion and slice it into thin slices and keep them in a sieve. Boil water and pour it over the cut onions. Now in a pan add water, white vinegar and apple cider vinegar in 2:1:1 ratio and heat them until they mix properly. You can also add a bit of salt and sugar at this time. Give everything a good stir and let it cool down a bit. Now place the onions in a sterilized container and pour this mixture in the jar. You can use these onions after a day or so and keep them in fridge and they will sty for about a week.

Cucumber and tomatoes– You can also follow the same recipe with cucumbers and tomatoes. Just remember not to cut the veggies before washing them. Wash them whole in hot water and then you can cut them into slices. To enhance the flavor you can also add whole garlic, peppercorns, bay leaf, and any leafy green like rosemary, thyme or dill leaves.

Carrots and cauliflower– Follow the same proportion as above, but this one can be done in a bit spicy way. Like you can add crushed garlic, turmeric for flavor and color, coriander seeds, peppercorns, red chilli flakes and bay leaf.

Radish and turnips– When they are in season do pickle them and they will go as side dishes, or eat them just like that for salads.

Mixed veggies– This one is the easiest one, simply pick the veggies of your choice, cucumber, onion, broccoli, cauliflower, carrots etc and follow the process of pickling. You can also add a bit of green chilli to spice up the flavor.
