4 Lipsmacking Gujiya Recipes For Holi

Mawa Gujiya– Heat a pan and cook 1/2 cup mawa for 3-4 minutes or until it becomes light brown. Once done set it aside and let it cool. To make the dough for the gujiya, mix 1 cup all purpose flour or maida and a pinch of salt, drizzle 1/4th cup oil and mix everything with your fingertips while giving it a crumbly texture. Taking help of lukewarm water knead a stiff dough, cover and keep it aside for 15 minutes. When the mawa is still warm but not hot to touch add powdered sugar, cardamom powder, cinnamon or nutmeg powder,  desiccated coconut and small pieces of cashew, raisins and almonds. Mix everything nicely and once the dough is ready knead it once more and divide it into 10 equal parts. Start making ghujiya with the mawa filling.

Sugar syrup gujiya’s– For a sugary crust prepare the gujiya’s like you normally do and dip them in sugar syrup right after they are fried. Make sugar syrup by cooking water and sugar together in 1:1 ratio and cook till one thread consistency.

Whole wheat flour gujiya– Mix 1 cup wholewheat flour or atta and 1 cup wheat flour or maida with a pich of salt. Drizzle 4 tbsp warm ghee or oil to this mix. Rub the oil with the flour for a crumbly texture and finally knead a firm dough with the help of warm water. Once done cover with a wet cloth and keep aside for half an hour. For the filling heat 1/2 tsp ghee in a pan and add 1 cup grated khoya to it and cook till it becomes brown. Once done let it cool down and then add powdered sugar, cardamom powder and chopped dry fruits. Now since the dough and filling are ready you can make the gujiya’s like you normally do. You can either deep fry them or bake them in oven at 200 degrees for 20-30 minutes.
