Cookies are loved by everyone whether kids or adults, but baking them makes the process lengthy and tiring.
So here are few cookies recipes for your family which do not require baking, just cook and enjoy….
Peanut Butter and Cornflakes Cookies– In a pan combine 1 cup sugar, 1 cup corn syrup and 1 cup peanut butter. Melt everything on a medium flame and keep on stirring continuously. Once everything melts and comes to a boil add 1 tbsp vanilla extract and 5-6 cups corn flakes. Make sure that everything mixes up well. As the mixture will harden very soon so you have to be quick to make the cookies as soon as you switch of the flame. Take help of a spoon or a ice cream scooper to take out mixture to make cookies and don’t worry about the shape, they wont be that perfect but will taste great. Let them cool completely before consuming. One thing to watch out, if you are not a fan of corn syrup, which according to me is not a healthy option substitute it with healthier options like maple syrup or honey.
Nutella Cookies– Over medium heat, cook 2 cup sugar, 1/4th cup cocoa, I/2 cup milk and 1/2 cup margarine. Boil for a minute and remove from heat. Stir in 1 tsp vanilla, pinch of salt, 1/4th cup peanut butter, 1/4th cup Nutella and 3 cup quick oats. Stir until combined. Drop by teaspoon on wax paper and cool. Refrigerate your cookies are ready.
Orange Snowball cookies-In a food processor, crush vanilla wafers to fine crumbs or place in a plastic bag and crush with a rolling pin. Put the crumbs in a large bowl. Add 2 cup coconut flakes to food processor and grind until pieces are finely chopped. Add chopped coconut to a shallow bowl. Add 1 cup walnuts to the food processor and grind until finely chopped. Add nuts to vanilla wafer crumbs in the large bowl and stir in 2 cup powdered sugar, 3/4th cup orange juice, 1/2 tsp vanilla extract and 1/2 cup butter. This mixture will be slightly sticky so be careful. Shape dough into 1 inch balls and roll in coconut scrap . Place on a cookie sheet and refrigerate until firm.
