Mahashivratri is being celebrated in most parts of the country today. So here are three delicious fasting recipes which you can make for your family on this special occasion….
Sabudana Kheer– Rinse 1/2 cup sabudana pearls in water so that the starch from the pearls clears out. Rinse it thoroughly until the water becomes clear. Soak these pearls in 2 cup water for about half an hour. Once done put the same pan on the gas and cook this on low flame. Now take 2 cup warm milk and add this to the sabudana and cook until the pearls are cooked completely. Add sugar in between and keep stiring till the kheer is cooked to avoid it from burning. Cooking this on low flame will give the kheer a nice creamy flavor, also always use full cream milk for preparing sweets as it adds to the flavor of the sweets. You can also add kesar and cardamom powder for flavor. Garnish with fried cashew and raisins.
Sweet Potato Chaat– In a pan add oil and let it heat a bit. To this add cumin seeds, curry leaves, red or green chillies and the once cumin starts to crackle add a bit of seasome seeds and saute for a minute. Now add chopped potato and again saute for 2-3 minutes. Add sendha namak, and finally add chopped sweet potato. Once both the things are cooked properly add coriander powder. Saute for a minute and switch off the gas. You can also add fried peanuts and dry coconut pieces to this chaat, serve hot.
Aloo peanut Chaat-In a pan add ghee and roast peanuts, keep aside. You can also crush them if you do not want to have them as whole. Cut potato in cubes and saute them in oil or ghee. Saute them on low flame and put the lid on. For a healthier option you can boil the potatoes and cut them in cubes and then follow the above procedure without the lid. Now add black pepper and saute for 1 more minute. Once done switch off the flame and let the potatoes cool down. Afterwards mix peanuts with this, you can also add green chilies if you are adding salt to this recipe. Enjoy this with curd, if having alone add a dash of lemon juice for the tangy flavor.
Makhana Chaat– In a pan add 1 tsp ghee and roast makhane until they are crisp. Once done keep them aside to cool down, now in a bowl take boiled and cubed potatoes, roasted peanuts, green chillies, makhane and season with salt and lemon juice. Roasted dry fruits can also be added to this chaat.
