In summers munching on juicy bites of watermelon is so refreshing which helps us to stay cool. But having it alone makes it boring sometimes, so how about adding few extra flavors to it by turning it into a salad.
A watermelon salad is anytime better than munching on a unhealthy snack.
Here are few recipes….
Watermelon salsa– Dice watermelon in a bowl and add chopped onion, cucumbers, bellpeppers, jalapenos, cheery tomatoes, cilantro, lime juice, salt and black pepper. Mix them all and serve in a watermelon shell. Its a treat for the eyes to see so many colors in one salad and it also taste’s great.
It’s always better to make this salad fresh, or keep it in the fridge if preparing beforehand to maintain the crunchiness of the watermelon and veggies. Also add salt and lemon at the time of serving and not before to that, otherwise the veggies and the fruit will leave their juices making the salad watery and soggy.
Watermelon cucumber salad– Its a refreshing salad which basically needs just two ingredients watermelon and cucumbers. Dice cucumbers and watermelon to pieces and add them in a bowl. You can also crush few mint leaves and add to the salad for a refreshing taste. To make it more tasty add feta cheese or paneer to the salad along with lemon juice, salt and pepper.
Watermelon spinach salad– A refreshing recipe with the added goodness of spinach, cucumbers, onion makes this watermelon salad truly to relish for. Add roasted walnuts for the crunchiness. You can also prepare a salad dressing with olive oil, lemon juice, honey, salt and pepper and add to the salad to increase the taste. Do not forget to add cheese though.
All fruity salad– Add chopped watermelon, mango and cucumbers in a bowl. To this mix up a dressing made of soy sauce, rice wine vinegar and ginger. Chopping a few pieces of jalapeno will give it a spicy kick. Instead of dicing you can also scoop out balls of watermelon for a good presentation.
