Makai atta or maize flour is full of health benefits and is especially enjoyed during winters. In different parts of India this flour is relished in many ways. Here are a few recipes to make from maize flour….
Makai Mooli Methi pararntha– Simply grate mooli and wash and chop methi leaves. Now in a bowl take both the things and add makai atta along with a little bit of wholewhaeat atta and mix everything together nicely. Add salt, ajwain, sauf, green chillies to taste and knead everything together and make a tight dough. Let the dough rest for 15-20 minutes before you start making parantha’s.
Makai atta Dosa– Add 1 cup makai atta and 1/4th cup rice flour to a bowl along with salt, cumin seeds, green chillies, grated ginger, chopped onions and chopped coriander leaves. Now add water to form a batter similar to the consistency of a dosa batter. Let it sit for 15 minutes before preparing these super tasty corn dosa’s.
Makai Dhokla– Take makai flour in a bowl and add salt, red chilli powder, cumin seeds, fennel seeds, ajwain, coriander powder, turmeric powder, green chillies, chopped coriander leaves, crushed peas and baking soda. You can also add presoaked dal like channa dal, moong dal, chole etc to this recipe. Now prepare a tight dough with the help of water and make small balls of this dough. Make a hole in the middle of the dhokla like you do for preparing vada. Now you can either boil these balls or steam them in a steamer. Once done take a pan and add oil to it, once it heats up add mustard seeds, hing, curry leaves and red chilli powder and fry the boiled or steamed dhoklas in it.
