Watermelon rinds are of great use and are full of nutrients. But most of the time we simply throw them as we don’t know how to use them. Well we have a few recipes which can help you to make good use of the watermelon rinds. Remember, the middle white part of the watermelon which is in between the red fruit and the green peel is called a rind. Don’t confuse it with the green peel.
Watermelon rind sabji– Remove the green part of the watermelon and use only the white part for your sabji. In a pan pour some mustard oil and add mustard seeds, few curry leaves, fenugreek seeds, kalonji, asafoetida, whole red chilli and give everything a quick stir. Now add the chopped watermelon rind and cook it for a minute or two. Now add, salt, chilli powder, turmeric powder, coriander powder and mix the spices with the sabji nicely. Cover and let the sabji cook on low flame, no need to add water. Add garam masala, and a bit of sugar and cook for more two more minutes. Once done add lemon juice and coriander leaves.
Watermelon rind halwa– In a blender make a fine paste of the rinds. Now in a pan add ghee and a stick of cinnamon. Add cashew powder and fry for some minutes. Now add the watermelon rind paste and cook for two three minutes. You can now add milk and sugar to the halwa and keep stirring it continuously. Once the milk is absorbed add dry fruit powder.
Watermelon jam– You can also prepare a fruity jam out of watermelon rinds. Cut the rinds of watermelon and an apple in really small pieces. Put them in a saucepan along with very little water as rinds will release good amount of water while cooking. Once they get a bit cooked, cool them and blend them in a blender. Now along with sugar cook the apple and watermelon rind paste till the jam is ready and thick.
